Customised wine

Americans are discovering what Europeans have known for ages: that you can get a better tasting wine by blending different ones together.

Dcantr, a pop-up wine bar inside the Stable Café in the Mission District of San Francisco is taking a Vom Fass approach by inviting people to create their own pinot blend. Patrons measure out their selections in delicate glass test tubes and decant them into beakers, for a truly customised glass of wine. The bar offers a daily menu of simple seasonal dishes prepared by a Michelin-starred chef, as well as a changing rotation of 10 micro-region wines from around the world.
